Description
For sample person aged 18 years and over who had heard of fiber, EHFIBLETTUCE indicates if the respondent thought there was more fiber in 1 cup of iceberg lettuce or 1 cup of carrots. Interviewers read respondents a series of pairs of foods and asked which food the respondent thought had more fiber. Respondents could choose one food, indicate both had the same amount of fiber, or indicate that they were unsure which food had more fiber.
EHFIBLETTUCE is part of a series of variables initiated in 1987 dealing with food, food knowledge, and cancer. For related variables, please use the IPUMS NHIS search function and drop-down menus or see DIETCHANGEV.
